Thinking carefully about where we spend money on food is a large part of eating locally and sustainably.  I know that when I buy produce from Wegman's, for example, that the vegetables may come from anywhere in the world.  Moreover, the farmer who grew the food will have to split any profits with Wegmans, the distributor, the marketer, and the packaging company.  There won't be much left for the farmer."

"First you layer instant mashed potato flakes on the bottom. I use 1/2 a box. Then over that you pour 4 cans of Cream of Mushroom soup. On top of that you do chunks of velveeta. I use an entire brick! Don't you just love the way Velveeta melts? "

Oh god, an entire brick of Velveeta? I can't believe what some people call cooking. It's not cooking, it's mixing packaged goods and heating them. Great story from the food whore. Thanks for posting!

Sad but true, this is the way many families eat.It's an endless cycle . Kids learn what they are taught, and they in turn ...

there are people in the world who can make mixed tapes and there are those who cannot.

I bet you're the former.

Not only have I seen recipes like this I have been forced to make them and work with people who love them.
I think a difficult thing is introducing people to foods they feel they can understand and afford after they've grown up with the above mentioned ingredients.

I know that these things are true. I work at Wegmans which carries wonderful fresh and even local produce and other products. We also have farmers markets operating every single day of the week in our county (although it would be nice to have some operating in the evenings!). You should see what people fill their carts with!

People come to me and ask where they can find velveeta (I work in the cheese department), and I have a really hard time not saying - no, I won't tell you because NO ONE should eat that garbage!

There is great dignity and spiritual peace in knowing who grew your food and where and how it was grown. It gives me such a great sense of calm and security knowing that I am eating in a way that supports a healthy body and community.
