Today on Bay Area Bites, Amy posted to talk about Round Table Pizza's New "Pepperoni Artisan Pizza", which also uses the descriptor "organic" though their only certified organic ingredient is the tomato sauce. Which brings to mind more questions and pontifications than I have time for today. When do we give corporations and big business credit for at least acknowledging organic and artisan as worthy goals, and when do we stomp on them for obviously using marketing terms and trendy adjectives to pander for new business?




i'm not sure what to think either. at the very least, it does seem disingenuous. similar issue with tyler florence and applebee's, rick bayless and burger king. on one hand, i say "sell out," and on another hand, i can see what they're trying to do and the power of the almighty dollar at work. i wish florence, at least, would talk about his decision more than this bit of prate in the applebee's press release: "being a chef in new york city, to ask everyone to come to me sometimes is a bit limiting, but to actually bring my food to the american people -- i'm really excited about it." does he have a blog somewhere? (that said, i did just make his pot roast recipe and it turned out really well.)
